An immersive experience at Institut Lyfe Executive Education for Marriott International’s Pastry Chefs

Having supported 10 bakery chefs from the Marriott International group in 2025, Institut Lyfe Executive Education is continuing its collaboration with the hotel group, this time welcoming nearly 20 pastry chefs for a tailored programme dedicated to pastry.

Over four days, these professionals, who work in Marriott International’s upscale hotels across Europe, the Middle East and Africa, immersed themselves in the art of pastry-making under the guidance of Chef Fillat and Chef Brunet.

A training programme to develop pastry-making skills

Designed to address the challenges and expectations of professionals working in the premium hospitality sector, this tailored programme enabled participants to deepen their skills in confectionery and chocolate-making, while exploring new approaches to contemporary pastry.

Through the creation of reimagined classics, chocolate work and confectionery, as well as the development of modern pastry ranges incorporating vegan and gluten-free alternatives, Marriott International’s pastry chefs are now better equipped to meet their customers’ needs.

The aim of this tailored programme was to enhance the chefs’ technical skills and enable them to offer a diverse range of pastries that caters to the expectations of an international clientele with specific dietary requirements.

Reimagining the great classics of French pastry for an international clientele

True to the excellence of French pastry, the tailored programme also focused on refining the techniques used to create classic pastries, including Saint-Honoré, Mont Blanc, Black Forest cake and Pavlova.

These creations provided an opportunity to experiment with traditional techniques while adapting them to current trends, particularly through vegan and gluten-free variations.
